[Horizon] How to configure the "Collection List" page to display only the collections you need

The "Collection List" page displayed at "/collections" in Shopify shows all collections by default. This includes test collections and others you may not want visible, and you cannot control the display order. Here is how to configure the "Horizon" theme so that only specific collections are displayed in your preferred order.
