When handling dates in Shopify Flow, if you set them as strings such as tags or text, you will need to adjust the time difference, unlike date-type values.

This is a bit of a nerdy topic, but when setting the current time as a string in a tag or text-format metafield in Shopify Flow, it will be set in standard time if left as is, so we have added a process to convert it to Japan time.
